Chocolate Chip Cookies

 

Chocolate Chip Cookies

1/4 Cup infused butter

3/4 Cup non-infused butter

3/4 Cup honey

1 egg

2 1/2 Cups flour of choice (I use organic white)

1 teaspoon baking soda

1/2 teaspoon salt

1 Cup coarsely chopped nuts (optional)

3/4 Cup chocolate chips

Heat oven to 300 F. Mix butters, honey, egg. Stir in flour, baking soda and salt. Stir in nuts if using and chocolate chips. I usually mix dough with my hands to get it to consistency I like and to incorporate everything evenly. Drop by tablespoonfuls on parchment lined cookie sheet. Because these cookies are made with honey they will spread a lot when baking so leave plenty of room between dough. Bake for about 20 minutes or until uncooked dough doesn’t squish out when pressed lightly. Immediately slide parchment with cookies onto cool rack or counter to cool completely. The time and temperature in this recipe makes for a nice consistency when cookies cool. If you prefer you can bake cookies at 375 F for 8-10 minutes.
